What the differences mean
Zigbee versus Z-Wave
The Sonoff Zigbee Water Leak Sensor needs a Zigbee hub. The Aeotec Water Sensor 7 Pro needs a Z-Wave hub. A search for an Aeotec Zigbee leak sensor does not match this Aeotec: the 7 Pro sheet lists Z-Wave only. The two will not share a coordinator.
